2 chicken breasts cut into strips
1/2 red pepper cut into strips
1/2 mango cut into strips
heat fry pan  cook chicken on medium heat   I sprinkle a little Cajun seasoning onto the chicken
when chicken is almost cooked, add red pepper.  add mango last
this is good served with rice or noodles. also, with a cheese omelet.

Yesterday, for the first time, I made a scallop soup.  I had bought a package of frozen scallops and divided the package. It was delicious and I want to share it with you.  When I make soup, I usually look through the fridge and cupboards to see what I can add.

BREAKFAST:  2 eggs scrambled in 1 teaspoon of coconut oil.  After the eggs are on your plate, add to them:  1 teaspoon of olive oil, 1 teaspoon ground flaxseed
BEVERAGE:  2 cups of green tea or 2 cups of coffee

With both coconut oil & olive oil, a little goes a long way.  If you like fried eggs or scrambled eggs, here’s what you can do. Instead of using your usual oil – fry the eggs in 1 teaspoon of coconut oil. The coconut oil imparts a mild flavor to the eggs. MMMM. Good.
